February 27th is National Strawberry Day and National Chili Day... Well guess what? I found a recipe for Strawberry Chili, this looks like a great recipe to get your little ones to eat some fruit!
CARIBBEAN FRUIT CHILI
- Fruit juices, combine any three, such as peach, orange, papaya, mango, pineapple 1/2 cup ea.
- Fresh fruits, such as mango, papaya, peach, kiwi, strawberry, 1/2" cubed 6 cups
- Chili powder 1 Tbsp.
- Garam masala 1 Tbsp.
- Tabasco Sauce 1 Tbsp.
- Coconut milk 1 cup
- Brown sugar, firmly packed 1/2 cup
- Lime juice, fresh 1/2 cup
- Salt 1/2 tsp.
- Sour cream for garnish
- Brown sugar for garnish
- Mint leaves, fresh for garnish
Method
1. Combine fruit juices of choice, chili powder and garam masala in a stainless steel
sauce pan. Simmer for 15 minutes, and then cool in an ice-water bath.
2. Add TABASCO Sauce, coconut milk, brown sugar, lime juice, and salt.
3. Add desired cubed fruits and marinate 4-24 hours.
4. Serve in a soup bowl or mug, each with a dollop of sour cream
sweetened with brown sugar and place a fresh mint leaf on top.
